This has the flavour and appearance of beef or venison bresaola fillet. We don’t age and hang ours for 3 weeks, as is the classic curing method for bresaola – instead we sous vide poach our vegan alternative in a secret spiced broth for 16 hours, to infuse it with flavour. We then rub it in another blend of spices including juniper, cloves and nutmeg, before baking it in the oven for 2 hours so it dries to a bresaola texture and the external spices soak into the “mheat”. Sliced wafer thin for your enjoyment just as the original, this has several depths of flavour you’ll want to go back to again and again.
